- 100ml Extra virgin olive oil
- 1 tbsp Tomato purée
- 50ml White wine
Cooking Method
- The Architect Gently heat the oil; add onion puree and cook until the moisture vanishes and it turns into a sweet golden jam.
- The Bloom Add garlic and spices with a tiny 20ml splash of wine; the sudden hiss will release the smoky aromatics.
- The Silk Merge Add tomato purée and remaining wine; simmer until the oil separates and turns a vibrant orange-red.
- The Marriage Use this silk as the base for any Portuguese rice, stew, or pasta.
