THE SIGNATURE SPICE-ROUTES RED-SWELL
(Our Play on the Ultimate Balkan Paprika Braise)
Ingredients: 800g Lamb or Pork shoulder (cubed), 2 Red onions (pureed), 2 Carrots (minced), 4 cloves Garlic, 2 tbsp Smoked paprika, 1 tbsp Cumin seeds, 1 tsp Black pepper, 400ml Red Wine, 2 tbsp Tomato purée, 1 tbsp Honey...
Ingredients
- 800g Lamb or Pork shoulder (cubed)
- 2 Red onions (pureed)
- 2 Carrots (minced)
- 4 cloves Garlic
- 2 tbsp Smoked paprika
- 1 tbsp Cumin seeds
- 1 tsp Black pepper
- 400ml Red Wine
- 2 tbsp Tomato purée
- 1 tbsp Honey
Cooking Method
- The Scorch Sear meat on maximum heat until dark brown and rock-hard charred; remove.
- The Architect Fry onion and carrot puree in the fat until sweet and dark.
- The Bloom Add spices and garlic with a 40ml splash of wine; the steam will release the smoky aromatics.
- The Swell Add passata, honey, and remaining wine; return meat. Simmer covered for 45 minutes until melting.
- The Final Flourish Top with a massive hit of raw fresh parsley and lemon zest.
