- 2 Red onions (pureed)
- 6 cloves Garlic (minced)
- 1 tbsp Chili flakes
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 400g Tomato passata
- 50ml Extra virgin olive oil
Cooking Method
- The Architect Fry onion puree in oil for 10 minutes until the water has evaporated and it's a dark, sweet jam.
- The Bloom Add spices and garlic with a 40ml splash of water; fry until the oil turns a deep, glowing red.
- The Marriage Pour in the passata; simmer for 5 minutes until the fire-oil separates on top.
- The Marriage Toss with your favorite pasta; the silk should cling tightly to every curve.
- The Final Flourish Top with raw fresh basil and a massive hit of pecorino cheese.
