THE SIGNATURE SPICE-ROUTES RED-RIB
(Our Play on the Ultimate Mexican Short Ribs)
Ingredients: 1kg Beef short ribs (on the bone), 4 tbsp Ancho/Guajillo chili paste, 1 tsp Cinnamon, 1 tsp Cumin, 1 tsp Cloves, 2 Red onions (pureed), 6 cloves Garlic (minced), 500ml Beef stock, 2 tbsp Honey, 2 tbsp Lime juice...
Ingredients
- 1kg Beef short ribs (on the bone)
- 4 tbsp Ancho/Guajillo chili paste
- 1 tsp Cinnamon
- 1 tsp Cumin
- 1 tsp Cloves
- 2 Red onions (pureed)
- 6 cloves Garlic (minced)
- 500ml Beef stock
- 2 tbsp Honey
- 2 tbsp Lime juice
Cooking Method
- The Scorch Sear short ribs on max heat until they are a dark, charred mahogany; remove.
- The Architect Fry onion puree and garlic in the beef fat for 10 minutes until it turns into a dark sweet jam.
- The Bloom Add chili paste and spices with a 50ml splash of stock; fry until the deep perfume releases.
- The Swell Add stock, honey, and lime juice; return meat and simmer covered for 80 minutes until falling off the bone.
- The Final Flourish Top with raw white onion, massive coriander, and a dusting of sea salt.
