THE SIGNATURE SPICE-ROUTES RED-REEF STEW

Ingredients: 500g Mixed Seafood (Fish chunks, Mussels, Prawns, Squid), 2 Red onions (pureed), 6 cloves Garlic (minced), 1 tbsp Smoked paprika, 1 tsp Black pepper, 1 tsp Salt, 400g Tomato passata, 200ml Dry Sherry, 200ml Fish stock...

Ingredients

  • 500g Mixed Seafood (Fish chunks, Mussels, Prawns, Squid)
  • 2 Red onions (pureed)
  • 6 cloves Garlic (minced)
  • 1 tbsp Smoked paprika
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 400g Tomato passata
  • 200ml Dry Sherry
  • 200ml Fish stock

Cooking Method

  1. The Architect Fry onion puree in 4 tbsp oil for 10 minutes until sweet and jammy.
  2. The Bloom Add spices and garlic with a 40ml splash of sherry to form a glowing red fire-paste.
  3. The Swell Pour in remaining sherry, passata, and stock; simmer for 10 minutes until thickened.
  4. The Marriage Add the seafood; cover and cook for 8 minutes until the mussels open and the fish is opaque.
  5. The Final Flourish Top with a massive hit of raw fresh parsley and serve with charred garlic bread.
