THE SIGNATURE SPICE-ROUTES RED-REEF STEW
(Our Play on the Ultimate Spanish Zarzuela)
Ingredients: 500g Mixed Seafood (Fish chunks, Mussels, Prawns, Squid), 2 Red onions (pureed), 6 cloves Garlic (minced), 1 tbsp Smoked paprika, 1 tsp Black pepper, 1 tsp Salt, 400g Tomato passata, 200ml Dry Sherry, 200ml Fish stock...
Ingredients
- 500g Mixed Seafood (Fish chunks, Mussels, Prawns, Squid)
- 2 Red onions (pureed)
- 6 cloves Garlic (minced)
- 1 tbsp Smoked paprika
- 1 tsp Black pepper
- 1 tsp Salt
- 400g Tomato passata
- 200ml Dry Sherry
- 200ml Fish stock
Cooking Method
- The Architect Fry onion puree in 4 tbsp oil for 10 minutes until sweet and jammy.
- The Bloom Add spices and garlic with a 40ml splash of sherry to form a glowing red fire-paste.
- The Swell Pour in remaining sherry, passata, and stock; simmer for 10 minutes until thickened.
- The Marriage Add the seafood; cover and cook for 8 minutes until the mussels open and the fish is opaque.
- The Final Flourish Top with a massive hit of raw fresh parsley and serve with charred garlic bread.
