- 400g Mixed Seafood (Mussels, Prawns, Squid)
- 2 Red onions (pureed)
- 6 cloves Garlic (minced)
- 1 tbsp Chili flakes
- 1 tsp Black pepper
- 1 tsp Salt
- 400g Tomato passata
- 100ml White wine
Cooking Method
- The Architect Fry onion puree in oil for 10 minutes until it turns into a dark, sweet jam.
- The Bloom Add spices and garlic with a 40ml splash of wine to form a deep glowing red paste.
- The Swell Pour in the passata and remaining wine; simmer for 10 minutes until thickened.
- The Marriage Add the seafood; cover and cook for 5 minutes until open, then toss with hot linguine.
- The Final Flourish Top with a massive hit of raw fresh parsley and a drizzle of raw garlic oil.
