THE SIGNATURE SPICE-ROUTES RED-CHILI

Ingredients: 600g Beef chuck (tiny 1cm cubes), 2 tbsp Ancho chili powder, 1 tsp Cumin, 1 tsp Cocoa powder, 1 tsp Dried Oregano, 2 Red onions (pureed), 4 cloves Garlic, 500g Tomato passata, 200ml Beef stock, 1 tbsp Honey...

Ingredients

  • 600g Beef chuck (tiny 1cm cubes)
  • 2 tbsp Ancho chili powder
  • 1 tsp Cumin
  • 1 tsp Cocoa powder
  • 1 tsp Dried Oregano
  • 2 Red onions (pureed)
  • 4 cloves Garlic
  • 500g Tomato passata
  • 200ml Beef stock
  • 1 tbsp Honey

Cooking Method

  1. The Scorch Sear beef on max heat until dark brown and charred; remove.
  2. The Architect Fry onion puree in the fat until it turns into a dark sweet jam.
  3. The Bloom Add spices and garlic with a 50ml splash of stock; fry until the deep perfume releases.
  4. The Swell Add passata, remaining stock, and honey; return beef and simmer covered for 45 minutes until melting.
  5. The Final Flourish Top with raw sour cream, fresh jalapeños, and massive amounts of coriander.
