THE SIGNATURE SPICE-ROUTES RED-CHILI
(Our Play on the Ultimate Beef Chili)
Ingredients: 600g Beef chuck (tiny 1cm cubes), 2 tbsp Ancho chili powder, 1 tsp Cumin, 1 tsp Cocoa powder, 1 tsp Dried Oregano, 2 Red onions (pureed), 4 cloves Garlic, 500g Tomato passata, 200ml Beef stock, 1 tbsp Honey...
Ingredients
- 600g Beef chuck (tiny 1cm cubes)
- 2 tbsp Ancho chili powder
- 1 tsp Cumin
- 1 tsp Cocoa powder
- 1 tsp Dried Oregano
- 2 Red onions (pureed)
- 4 cloves Garlic
- 500g Tomato passata
- 200ml Beef stock
- 1 tbsp Honey
Cooking Method
- The Scorch Sear beef on max heat until dark brown and charred; remove.
- The Architect Fry onion puree in the fat until it turns into a dark sweet jam.
- The Bloom Add spices and garlic with a 50ml splash of stock; fry until the deep perfume releases.
- The Swell Add passata, remaining stock, and honey; return beef and simmer covered for 45 minutes until melting.
- The Final Flourish Top with raw sour cream, fresh jalapeños, and massive amounts of coriander.
