THE SIGNATURE SPICE-ROUTES RED-BEEF
(Our Play on the Ultimate Spanish Beef Ragu)
Ingredients: 600g Beef chuck (tiny 1cm cubes), 2 Red onions (pureed), 2 Carrots (minced), 2 Celery stalks (minced), 1 tbsp Smoked paprika, 1 tsp Black pepper, 1 tsp Dried Rosemary, 500g Tomato passata, 200ml Dry Sherry...
Ingredients
- 600g Beef chuck (tiny 1cm cubes)
- 2 Red onions (pureed)
- 2 Carrots (minced)
- 2 Celery stalks (minced)
- 1 tbsp Smoked paprika
- 1 tsp Black pepper
- 1 tsp Dried Rosemary
- 500g Tomato passata
- 200ml Dry Sherry
Cooking Method
- The Scorch Sear beef on max heat until charred and browned; remove.
- The Architect Fry onion, carrot, and celery in the beef fat until it turns into a dark sweet jam.
- The Bloom Add spices with a 40ml splash of sherry to form a thick fire-paste.
- The Swell Add passata and remaining sherry; return beef and simmer covered for 50 minutes.
- The Final Flourish Top with a massive grating of raw manchego and fresh raw parsley.
