THE SIGNATURE SPICE-ROUTES RED-BEEF

Ingredients: 600g Beef chuck (tiny 1cm cubes), 2 Red onions (pureed), 2 Carrots (minced), 2 Celery stalks (minced), 1 tbsp Smoked paprika, 1 tsp Black pepper, 1 tsp Dried Rosemary, 500g Tomato passata, 200ml Dry Sherry...

Ingredients

  • 600g Beef chuck (tiny 1cm cubes)
  • 2 Red onions (pureed)
  • 2 Carrots (minced)
  • 2 Celery stalks (minced)
  • 1 tbsp Smoked paprika
  • 1 tsp Black pepper
  • 1 tsp Dried Rosemary
  • 500g Tomato passata
  • 200ml Dry Sherry

Cooking Method

  1. The Scorch Sear beef on max heat until charred and browned; remove.
  2. The Architect Fry onion, carrot, and celery in the beef fat until it turns into a dark sweet jam.
  3. The Bloom Add spices with a 40ml splash of sherry to form a thick fire-paste.
  4. The Swell Add passata and remaining sherry; return beef and simmer covered for 50 minutes.
  5. The Final Flourish Top with a massive grating of raw manchego and fresh raw parsley.
