  • 150g Sun-dried tomatoes
  • 30g Almonds
  • 2 cloves Garlic
  • 1 small red onion (minced)
  • 1 tsp Smoked paprika
  • 1 tsp Chili flakes
  • 100ml Extra virgin olive oil
  • 50g Manchego

Cooking Method

  1. The Scorch Briefly toast the almonds in a dry pan until the oils release.
  2. The Bloom Blitz tomatoes, garlic, and spices with a tiny 15ml splash of water to form a dark fire-paste.
  3. The Silk Merge Slowly drizzle in the olive oil while pulsing until the sauce is a thick, dark red silk.
  4. The Marriage Stir in the cheese by hand to maintain the architecture of the paste.
  5. The Final Flourish Toss with hot pasta and top with fresh raw parsley matchsticks.
