THE SIGNATURE SPICE-ROUTES OSSOBUCO

Ingredients: 2 Veal shanks (thick cut), 2 Red onions (pureed), 2 Carrots (minced), 2 Celery stalks (minced), 1 tsp Turmeric, 1 tsp Black pepper, 1 tsp Dried Thyme, 200ml White wine, 400ml Veal stock, 1 tbsp Tomato purée...

Ingredients

  • 2 Veal shanks (thick cut)
  • 2 Red onions (pureed)
  • 2 Carrots (minced)
  • 2 Celery stalks (minced)
  • 1 tsp Turmeric
  • 1 tsp Black pepper
  • 1 tsp Dried Thyme
  • 200ml White wine
  • 400ml Veal stock
  • 1 tbsp Tomato purée

Cooking Method

  1. The Scorch Sear veal shanks in oil on high heat until dark brown and charred; remove.
  2. The Architect Fry onion puree and minced veg in the meat fat until sweet and jammy.
  3. The Bloom Add spices and tomato purée with a 50ml splash of wine to release the perfume.
  4. The Swell Add remaining wine and stock; return meat and simmer covered for 50 minutes until melting.
  5. The Final Flourish Top with raw fresh lemon zest, minced garlic, and parsley (Gremolata).
