- 600g Chicken thighs (skin-on)
- 1 Large onion (pureed)
- 4 cloves Garlic (minced)
- 4 tbsp Soy sauce
- 2 tbsp Honey
- 1 tbsp Rice vinegar
- Sesame seeds
- Spring onions
- Lime zest
Cooking Method
- The Scorch Fry chicken skin-side down until the skin is rock-hard and the fat has rendered; remove.
- The Architect Sauté onion puree and garlic in the chicken fat until sweet and deep golden brown.
- The Bloom Add the silk ingredients and a 50ml splash of water; boil for 5 minutes until it form a thick black lacquer.
- The Marriage Toss the chicken back in until every piece is mahogany and glistening.
- The Final Flourish Top with a massive hit of raw spring onions, sesame seeds, and fresh lime zest.
