Ingredients

  • 600g Chicken thighs (skin-on)
  • 1 Large onion (pureed)
  • 4 cloves Garlic (minced)
  • 4 tbsp Soy sauce
  • 2 tbsp Honey
  • 1 tbsp Rice vinegar
  • Sesame seeds
  • Spring onions
  • Lime zest

Cooking Method

  1. The Scorch Fry chicken skin-side down until the skin is rock-hard and the fat has rendered; remove.
  2. The Architect Sauté onion puree and garlic in the chicken fat until sweet and deep golden brown.
  3. The Bloom Add the silk ingredients and a 50ml splash of water; boil for 5 minutes until it form a thick black lacquer.
  4. The Marriage Toss the chicken back in until every piece is mahogany and glistening.
  5. The Final Flourish Top with a massive hit of raw spring onions, sesame seeds, and fresh lime zest.
