- 50g Flour
- 500ml Whole milk
- 150g Gruyère or Emmental (grated)
- 2 tsp Nutmeg (freshly grated)
- 1 tsp White pepper
- 1 tsp Salt
Cooking Method
- The Architect Melt butter and flour into a pale biscuit paste; whisk for 2 minutes.
- The Bloom Add nutmeg and white pepper with a tiny 20ml splash of warm milk; the heat will release the woody spice oils.
- The Silk Merge Gradually whisk in the remaining milk; simmer until it forms a heavy, glossy white silk.
- The Marriage Stir in the cheese until it vanishes into the silk; do not boil.
- The Final Flourish Finish with extra raw nutmeg and serve over your favorite protein.
