THE SIGNATURE SPICE-ROUTES MARINE

Ingredients: 500g Mixed Fish (Snapper, Bass, Salmon), 200g Prawns, 2 Red onions (pureed), 2 Leeks (sliced), 1 Fennel bulb (sliced), 2 tsp Saffron, 1 tsp Smoked paprika, 1 tsp Dried Thyme, 1L Fish stock, 200g Tomato passata...

Ingredients

  • 500g Mixed Fish (Snapper, Bass, Salmon)
  • 200g Prawns
  • 2 Red onions (pureed)
  • 2 Leeks (sliced)
  • 1 Fennel bulb (sliced)
  • 2 tsp Saffron
  • 1 tsp Smoked paprika
  • 1 tsp Dried Thyme
  • 1L Fish stock
  • 200g Tomato passata
  • 1 tbsp Orange juice

Cooking Method

  1. The Architect Fry onion puree, leeks, and fennel in 4 tbsp oil until soft and jammy.
  2. The Bloom Add spices with a 40ml splash of stock to form a deep glowing red fire-paste.
  3. The Swell Pour in passata, stock, and orange juice; simmer for 15 minutes until thickened.
  4. The Marriage Gently add fish and prawns; simmer for 6 minutes until opaque.
  5. The Final Flourish Serve with a raw hit of garlic aioli and fresh parsley.
