THE SIGNATURE SPICE-ROUTES MARINE
(Our Play on the Ultimate Quick Bouillabaisse)
Ingredients: 500g Mixed Fish (Snapper, Bass, Salmon), 200g Prawns, 2 Red onions (pureed), 2 Leeks (sliced), 1 Fennel bulb (sliced), 2 tsp Saffron, 1 tsp Smoked paprika, 1 tsp Dried Thyme, 1L Fish stock, 200g Tomato passata...
Ingredients
- 500g Mixed Fish (Snapper, Bass, Salmon)
- 200g Prawns
- 2 Red onions (pureed)
- 2 Leeks (sliced)
- 1 Fennel bulb (sliced)
- 2 tsp Saffron
- 1 tsp Smoked paprika
- 1 tsp Dried Thyme
- 1L Fish stock
- 200g Tomato passata
- 1 tbsp Orange juice
Cooking Method
- The Architect Fry onion puree, leeks, and fennel in 4 tbsp oil until soft and jammy.
- The Bloom Add spices with a 40ml splash of stock to form a deep glowing red fire-paste.
- The Swell Pour in passata, stock, and orange juice; simmer for 15 minutes until thickened.
- The Marriage Gently add fish and prawns; simmer for 6 minutes until opaque.
- The Final Flourish Serve with a raw hit of garlic aioli and fresh parsley.
