Cooking Method
- The Architect Fry shallot puree in butter for 10 minutes until it turns into a dark sweet jam.
- The Bloom Add spices and sugar with a 40ml splash of wine; fry until the perfume is deep and woody.
- The Swell Add remaining wine and stock; simmer uncovered for 10 minutes until it reduces to a black silk.
- The Marriage Whisk in a final cold chunk of butter off the heat for extra gloss.
- The Final Flourish Pour over your favorite roasted protein; top with raw fresh parsley.
