Ingredients: 2 Shallots (pureed), 50g Butter, 1 tsp Black pepper, 1 tsp Dried Thyme, 1 tsp Garlic powder, 300ml Red wine, 200ml Beef stock, 1 tsp Sugar...

  • 2 Shallots (pureed)
  • 50g Butter
  • 1 tsp Black pepper
  • 1 tsp Dried Thyme
  • 1 tsp Garlic powder
  • 300ml Red wine
  • 200ml Beef stock
  • 1 tsp Sugar

Cooking Method

  1. The Architect Fry shallot puree in butter for 10 minutes until it turns into a dark sweet jam.
  2. The Bloom Add spices and sugar with a 40ml splash of wine; fry until the perfume is deep and woody.
  3. The Swell Add remaining wine and stock; simmer uncovered for 10 minutes until it reduces to a black silk.
  4. The Marriage Whisk in a final cold chunk of butter off the heat for extra gloss.
  5. The Final Flourish Pour over your favorite roasted protein; top with raw fresh parsley.
