Ingredients: 1kg Chicken thighs (bone-in), 3 Red onions (pureed), 2 tbsp Ginger-garlic paste, 1.5 tsp Turmeric, 2 tsp Red chili powder, 2 tsp Coriander powder, 200g Tomato passata, 200ml Boiling water...

Ingredients

  • 1kg Chicken thighs (bone-in)
  • 3 Red onions (pureed)
  • 2 tbsp Ginger-garlic paste
  • 1.5 tsp Turmeric
  • 2 tsp Red chili powder
  • 2 tsp Coriander powder
  • 200g Tomato passata
  • 200ml Boiling water

Cooking Method

  1. The Architect Fry onion puree in oil for 15 minutes until dark, sweet, and jammy.
  2. The Bloom Add spices and a 50ml splash of water; fry for 5 minutes until the oil rises to the top.
  3. The Sear Add chicken and sear on high heat for 10 minutes until every piece is stained dark red.
  4. The Simmer Add passata and boiling water; cover and simmer low for 20 minutes.
  5. The Final Flourish Stir in a massive hit of fresh coriander, Garam Masala, and a final squeeze of lime.
