THE SIGNATURE SPICE-ROUTES CHICKEN

- 1kg Chicken thighs (bone-in)
- 3 Red onions (pureed)
- 2 tbsp Ginger-garlic paste
- 1.5 tsp Turmeric
- 2 tsp Red chili powder
- 2 tsp Coriander powder
- 200g Tomato passata
- 200ml Boiling water
Cooking Method
- The Architect Fry onion puree in oil for 15 minutes until dark, sweet, and jammy.
- The Bloom Add spices and a 50ml splash of water; fry for 5 minutes until the oil rises to the top.
- The Sear Add chicken and sear on high heat for 10 minutes until every piece is stained dark red.
- The Simmer Add passata and boiling water; cover and simmer low for 20 minutes.
- The Final Flourish Stir in a massive hit of fresh coriander, Garam Masala, and a final squeeze of lime.
