THE SIGNATURE SPICE-ROUTES CASSOULET
(Our Play on the Ultimate Shortcut Bean Stew)
Ingredients: 800g Cannellini beans (canned), 2 Duck legs (cooked and shredded), 100g Garlic sausage (sliced), 2 Red onions (pureed), 3 cloves Garlic, 1 tsp Dried Thyme, 1 tsp Black pepper, 2 Bay leaves, 200g Tomato passata, 200ml Chicken stock...
Ingredients
- 800g Cannellini beans (canned)
- 2 Duck legs (cooked and shredded)
- 100g Garlic sausage (sliced)
- 2 Red onions (pureed)
- 3 cloves Garlic
- 1 tsp Dried Thyme
- 1 tsp Black pepper
- 2 Bay leaves
- 200g Tomato passata
- 200ml Chicken stock
Cooking Method
- The Scorch Fry sausage slices until charred and crispy; remove fat.
- The Architect Fry onion puree and garlic in the fat until sweet and golden.
- The Bloom Add spices with a 40ml splash of stock; the steam will release the smoky aromatics.
- The Swell Add beans, passata, and remaining stock; return meat. Simmer uncovered for 20 minutes until thick.
- The Final Flourish Top with raw toasted breadcrumbs and fresh raw parsley.
