THE SIGNATURE SPICE-ROUTES CARNITA

Ingredients: 1kg Pork belly (cubed), 50g Lard or Oil, 1 tbsp Cumin seeds, 1 tbsp Dried Oregano, 1 tsp Black pepper, 1 Large onion (quartered), 6 cloves Garlic (whole), 500ml Water, 1 Orange (juiced and zested)...

Ingredients

  • 1kg Pork belly (cubed)
  • 50g Lard or Oil
  • 1 tbsp Cumin seeds
  • 1 tbsp Dried Oregano
  • 1 tsp Black pepper
  • 1 Large onion (quartered)
  • 6 cloves Garlic (whole)
  • 500ml Water
  • 1 Orange (juiced and zested)

Cooking Method

  1. The Swell Place pork, onion, garlic, and spices in a pot; submerge in water. Simmer for 70 minutes until water evaporates.
  2. The Bloom Add a tiny 20ml splash of fresh water as the pot goes dry to release the rendered fat.
  3. The Scorch Fry the pork in the lard and rendered fat on maximum heat for 10 minutes until rock-hard crispy.
  4. The Marriage Add orange juice and zest; toss until the sugar forms a dark red lacquer on the meat.
  5. The Final Flourish Serve with raw white onion, massive amounts of coriander, and lime.
