THE SIGNATURE SOY-HONEY SCORCH
(Our Play on Sticky Asian Chicken Thighs)
Ingredients: 600g Chicken thighs (skin-on preferred), 3 tbsp Soy sauce, 2 tbsp Honey, 1 tbsp Sriracha, 2 Red onions (pureed), 1 tbsp Garlic paste, Lime zest, Sesame seeds...
Ingredients
- 600g Chicken thighs (skin-on preferred)
- 3 tbsp Soy sauce
- 2 tbsp Honey
- 1 tbsp Sriracha
- 2 Red onions (pureed)
- 1 tbsp Garlic paste
- Lime zest
- Sesame seeds
Cooking Method
- The Scorch Fry chicken in a hot pan skin-side down for 8 minutes until the fat renders and skin is dark brown.
- The Architect Add onion puree and garlic; sauté in the chicken fat until sweet and golden.
- The Bloom Add the glaze ingredients with a 30ml splash of water; fry for 5 minutes until the sauce is a thick lava.
- The Marriage Toss chicken in the sauce until every piece is mahogany and sticky.
- The Final Flourish Top with lime zest and sesame seeds for a final fresh hit.
