THE SIGNATURE SOY-GINGER SCORCH

Ingredients: 600g Chicken thighs (skin-on), 1 Red onion (pureed), 40g Fresh ginger (grated), 3 tbsp Soy sauce, 2 tbsp Honey, 1 tbsp Sriracha...

Ingredients

  • 600g Chicken thighs (skin-on)
  • 1 Red onion (pureed)
  • 40g Fresh ginger (grated)
  • 3 tbsp Soy sauce
  • 2 tbsp Honey
  • 1 tbsp Sriracha

Cooking Method

  1. The Scorch Fry chicken skin-side down until the fat renders and skin is crispy; remove.
  2. The Architect Sauté onion and ginger in the chicken fat until sweet and golden.
  3. The Bloom Add the silk ingredients and a 40ml splash of water; boil until it form a thick black lacquer.
  4. The Marriage Toss the chicken back in until every piece is mahogany and sticky.
  5. The Final Flourish Top with raw ginger matchsticks and sesame seeds.
