Ingredients: 500g King prawns, 2 Shallots (pureed), 2 cloves Garlic (minced), 1 Bell pepper (pureed), 1 tsp Saffron, 1 tsp Turmeric, 1 tsp Black pepper, 200ml Coconut milk, 100ml White wine, 50g Butter...

  • 500g King prawns
  • 2 Shallots (pureed)
  • 2 cloves Garlic (minced)
  • 1 Bell pepper (pureed)
  • 1 tsp Saffron
  • 1 tsp Turmeric
  • 1 tsp Black pepper
  • 200ml Coconut milk
  • 100ml White wine
  • 50g Butter

Cooking Method

  1. The Architect Fry shallot and pepper puree in butter until the moisture evaporates and it turns into a sweet golden jam.
  2. The Bloom Add spices with a 40ml splash of wine; the heat will release the golden oils.
  3. The Silk Merge Pour in coconut milk; simmer for 5 minutes until it reduces to a thick, vibrant yellow silk.
  4. The Marriage Add prawns; poach for 3 minutes until pink and lacquered.
  5. The Final Flourish Top with a massive amount of raw fresh coriander and lemon zest.
