THE SIGNATURE SAFFRON-REEF SILK
(Our Play on the Ultimate Portuguese Prawn Stew)

- 2 Shallots (pureed)
- 2 cloves Garlic (minced)
- 1 Bell pepper (pureed)
- 1 tsp Saffron
- 1 tsp Turmeric
- 1 tsp Black pepper
- 200ml Coconut milk
- 100ml White wine
- 50g Butter
Cooking Method
- The Architect Fry shallot and pepper puree in butter until the moisture evaporates and it turns into a sweet golden jam.
- The Bloom Add spices with a 40ml splash of wine; the heat will release the golden oils.
- The Silk Merge Pour in coconut milk; simmer for 5 minutes until it reduces to a thick, vibrant yellow silk.
- The Marriage Add prawns; poach for 3 minutes until pink and lacquered.
- The Final Flourish Top with a massive amount of raw fresh coriander and lemon zest.
