Ingredients

  • 500g Beef and Pork mince mix
  • 2 Red onions (pureed)
  • 4 cloves Garlic
  • 1 tsp Smoked paprika
  • 1 tsp Chili flakes
  • 1 tsp Dried Oregano
  • 400g Tomato passata
  • 100ml Beef stock

Cooking Method

  1. The Build Knead meat, garlic, and half the spices until tacky; shape into large spheres.
  2. The Scorch Sear spheres in oil on high heat until charred and rock-hard crispy; remove.
  3. The Architect Fry onion puree in the same pan until sweet and dark gold.
  4. The Bloom Add remaining spices with a 40ml splash of stock to release the aromatics.
  5. The Swell Add passata; return meatballs and simmer for 20 minutes until the sauce is a thick lacquer.
  6. The Final Flourish Top with raw fresh basil and a mountain of parmesan.
