THE SIGNATURE RAKIJA-HONEY LAMB
(Our Play on the Ultimate Balkan Roast)
Ingredients: 1.5kg Leg of Lamb, 1 tbsp Smoked paprika, 1 tbsp Dried Oregano, 1 tsp Black pepper, 10 cloves Garlic (sliced), 100ml Extra virgin olive oil, 100ml Rakija or Brandy, 100ml Honey, 1 Lemon (juiced)...
Ingredients
- 1.5kg Leg of Lamb
- 1 tbsp Smoked paprika
- 1 tbsp Dried Oregano
- 1 tsp Black pepper
- 10 cloves Garlic (sliced)
- 100ml Extra virgin olive oil
- 100ml Rakija or Brandy
- 100ml Honey
- 1 Lemon (juiced)
Cooking Method
- The Build Make deep slits in the lamb; stuff with garlic slices.
- The Bloom Whisk oil and dry spices with a 20ml splash of Rakija; the moisture will help the oregano oils penetrate the skin.
- The Scorch Roast at 210°C for 25 minutes until the skin is rock-hard charred; reduce to 170°C for 80 minutes.
- The Marriage Whisk honey, remaining Rakija, and lemon juice; brush heavily over the meat for the last 15 minutes.
- The Final Flourish Rest for 20 minutes; finish with raw extra virgin olive oil and fresh raw rosemary.
