Ingredients

  • 50g Dried Malagueta or Chili flakes
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 200ml Extra virgin olive oil
  • 2 tbsp Red wine vinegar
  • 4 cloves Garlic (minced)
  • 1 Lemon (juiced)

Cooking Method

  1. The Architect Gently heat the oil and garlic until it starts to sizzle—do not brown.
  2. The Bloom Add the chili and paprika to the hot oil with a tiny 15ml splash of vinegar; the reaction will bloom the fiery oils.
  3. The Marriage Stir in the lemon juice; the acid will pop the oil bubbles.
  4. The Finish Let cool; the oil will turn a deep, dangerous red.
  5. The Final Flourish Use as a raw spicy hit for everything.
