THE SIGNATURE PIRI-PIRI RIBS

Ingredients: 1kg Beef short ribs, 2 Red onions (pureed), 4 cloves Garlic, 1 Bell pepper (minced), 2 tbsp Piri-Piri flakes, 1 tsp Smoked paprika, 1 tsp Cumin, 500ml Red wine, 200ml Tomato passata, 1 tbsp Honey...

Ingredients

  • 1kg Beef short ribs
  • 2 Red onions (pureed)
  • 4 cloves Garlic
  • 1 Bell pepper (minced)
  • 2 tbsp Piri-Piri flakes
  • 1 tsp Smoked paprika
  • 1 tsp Cumin
  • 500ml Red wine
  • 200ml Tomato passata
  • 1 tbsp Honey

Cooking Method

  1. The Scorch Sear ribs on maximum heat until blackened and charred; remove.
  2. The Architect Fry onion and pepper puree in the fat until sweet and dark.
  3. The Bloom Add spices and garlic with a 50ml splash of wine; the steam will form a thick fire-paste.
  4. The Swell Add passata, remaining wine, and honey; return ribs. Simmer covered for 80 minutes until melting.
  5. The Final Flourish Top with a massive hit of raw fresh coriander and lemon zest.
