THE SIGNATURE NUTTY RED-SILK
(Our Play on the Ultimate Romesco Sauce)
Ingredients: 2 Large Roasted Red peppers, 2 Ripe Tomatoes (roasted), 50g Roasted Almonds, 20g Pine nuts, 3 cloves Roasted Garlic, 1 small onion (minced), 1 tsp Smoked paprika, 1 tsp Chili flakes, 1 tsp Salt, 100ml Extra virgin olive oil...
Ingredients
- 2 Large Roasted Red peppers
- 2 Ripe Tomatoes (roasted)
- 50g Roasted Almonds
- 20g Pine nuts
- 3 cloves Roasted Garlic
- 1 small onion (minced)
- 1 tsp Smoked paprika
- 1 tsp Chili flakes
- 1 tsp Salt
- 100ml Extra virgin olive oil
- 2 tbsp Sherry vinegar
Cooking Method
- The Scorch Briefly toast the almonds and pine nuts in a dry pan until the oils release.
- The Bloom Blitz peppers, tomatoes, garlic, and spices with a tiny 15ml splash of water to form a dark fire-paste.
- The Silk Merge Slowly drizzle in the oil and vinegar while pulsing until it forms a thick, chunky red silk.
- The Marriage Stir in the nuts by hand to maintain the architecture of the sauce.
- The Final Flourish Serve as a raw dipping silk for grilled meats or veg.
