THE SIGNATURE FIRE-BIRD
(Our Play on the Ultimate Piri-Piri Roast)
Ingredients: 1 Whole Chicken (spatchcocked), 4 tbsp Piri-Piri flakes, 1 tsp Smoked paprika, 1 tsp Garlic powder, 100ml Extra virgin olive oil, 2 tbsp Honey, 2 tbsp Lemon juice, 6 cloves Garlic (minced)...
Ingredients
- 1 Whole Chicken (spatchcocked)
- 4 tbsp Piri-Piri flakes
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 100ml Extra virgin olive oil
- 2 tbsp Honey
- 2 tbsp Lemon juice
- 6 cloves Garlic (minced)
Cooking Method
- The Bloom Whisk piri-piri, paprika, and garlic powder with 30ml warm water to release the oils.
- The Silk Merge Whisk in the oil, honey, and lemon juice until a thick, glowing fire-silk forms.
- The Coat Rub half the silk over the chicken; roast at 200°C for 25 minutes.
- The Scorch Baste with the remaining fire-silk; roast at 230°C for 15 minutes until the skin is a blackened, sticky shield.
- The Final Flourish Finish with raw extra piri-piri oil and fresh coriander.
