THE SIGNATURE FIRE-BIRD

Ingredients: 1 Whole Chicken (spatchcocked), 4 tbsp Piri-Piri flakes, 1 tsp Smoked paprika, 1 tsp Garlic powder, 100ml Extra virgin olive oil, 2 tbsp Honey, 2 tbsp Lemon juice, 6 cloves Garlic (minced)...

Ingredients

  • 1 Whole Chicken (spatchcocked)
  • 4 tbsp Piri-Piri flakes
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 100ml Extra virgin olive oil
  • 2 tbsp Honey
  • 2 tbsp Lemon juice
  • 6 cloves Garlic (minced)

Cooking Method

  1. The Bloom Whisk piri-piri, paprika, and garlic powder with 30ml warm water to release the oils.
  2. The Silk Merge Whisk in the oil, honey, and lemon juice until a thick, glowing fire-silk forms.
  3. The Coat Rub half the silk over the chicken; roast at 200°C for 25 minutes.
  4. The Scorch Baste with the remaining fire-silk; roast at 230°C for 15 minutes until the skin is a blackened, sticky shield.
  5. The Final Flourish Finish with raw extra piri-piri oil and fresh coriander.
