(Our Play on Every-Day Chicken Curry)
Ingredients: 800g Chicken thighs (bone-in), 2 Large onions (finely diced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1.5 tsp Chili powder, 2 tsp Coriander powder, 2 Fresh tomatoes (chopped), 400ml Boiling water...
Ingredients
- 800g Chicken thighs (bone-in)
- 2 Large onions (finely diced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1.5 tsp Chili powder
- 2 tsp Coriander powder
- 2 Fresh tomatoes (chopped)
- 400ml Boiling water
Cooking Method
- The Architect Fry onions for 12 minutes until they are a deep caramel brown.
- The Bloom Add spices and tomatoes; mash for 5 minutes into a thick, oily paste.
- The Sear Add chicken and stir for 5 minutes to coat in the spice paste.
- The Simmer Pour in boiling water; simmer covered for 20 minutes until the oil floats to the top.
- The Final Flourish Stir in Garam Masala and a massive handful of coriander right before serving.
