THE SIGNATURE BALKAN ROAST LEG
(Our Play on the Ultimate Spiced Lamb Leg)
Ingredients: 1.5kg Leg of Lamb, 1 tbsp Smoked paprika, 1 tbsp Dried Oregano, 1 tsp Cumin, 10 cloves Garlic (sliced), 100ml Extra virgin olive oil, 1 tbsp Salt, 2 Lemons (juiced), 1 tbsp Honey...
Ingredients
- 1.5kg Leg of Lamb
- 1 tbsp Smoked paprika
- 1 tbsp Dried Oregano
- 1 tsp Cumin
- 10 cloves Garlic (sliced)
- 100ml Extra virgin olive oil
- 1 tbsp Salt
- 2 Lemons (juiced)
- 1 tbsp Honey
Cooking Method
- The Build Make deep slits in the lamb; stuff with garlic slices.
- The Bloom Whisk oil and spices with a 20ml splash of lemon juice to release the herb oils.
- The Coat Rub the spiced oil heavily over the skin; let sit for 1 hour.
- The Scorch Roast at 210°C for 20 minutes until the skin is rock-hard and blackened; reduce to 170°C for 60 minutes.
- The Marriage Whisk honey and remaining lemon juice; brush over the meat for the last 5 minutes.
- The Final Flourish Rest for 15 minutes; top with raw fresh rosemary matchsticks and a final rain of coarse salt.
