THE SIGNATURE BALKAN RED-SILK
(Our Play on the Ultimate Balkan Sauce)
Ingredients: 2 Red onions (pureed), 2 Roasted Red Peppers (pureed), 6 cloves Garlic, 1 tbsp Smoked paprika, 1 tsp Chili flakes, 1 tsp Cumin, 100ml Extra virgin olive oil, 1 tbsp Tomato purée, 1 tbsp Honey...
Ingredients

- 2 Roasted Red Peppers (pureed)
- 6 cloves Garlic
- 1 tbsp Smoked paprika
- 1 tsp Chili flakes
- 1 tsp Cumin
- 100ml Extra virgin olive oil
- 1 tbsp Tomato purée
- 1 tbsp Honey
Cooking Method
- The Architect Fry onion and pepper puree in oil until the water evaporates and it turns sweet.
- The Bloom Add spices and garlic with a 30ml splash of stock; the steam will form a thick red fire-paste.
- The Silk Merge Whisk in honey and tomato purée; simmer for 5 minutes until glossy.
- The Marriage Use as a raw dip or lacquer for any roasted meat or veg.
- The Final Flourish Top with raw fresh coriander and a rain of raw black pepper.
