THE SIGNATURE BALKAN-FUSION ROAST

Ingredients: 1kg Pork shoulder (chunks), 1 tbsp Smoked paprika, 1 tbsp Garam Masala, 1 tsp Piri-Piri flakes, 2 Red onions (pureed), 2 cloves Garlic, 20g Ginger, 200ml Coconut milk, 100ml Red wine, 1 tbsp Honey...
Ingredients
- 1kg Pork shoulder (chunks)
- 1 tbsp Smoked paprika
- 1 tbsp Garam Masala
- 1 tsp Piri-Piri flakes
- 2 Red onions (pureed)
- 2 cloves Garlic
- 20g Ginger
- 200ml Coconut milk
- 100ml Red wine
- 1 tbsp Honey
Cooking Method
- The Scorch Sear pork in oil on maximum heat until blackened and charred; remove.
- The Architect Fry onion, garlic, and ginger until it turns into a sweet, dark jam.
- The Bloom Add spices and honey with a 50ml splash of wine; the steam will release the global aromatics.
- The Swell Add remaining wine and coconut milk; return meat. Simmer covered for 45 minutes until tender.
- The Final Flourish Top with raw fresh coriander and a final dust of raw cinnamon.
