Ingredients: 1kg Pork shoulder (chunks), 1 tbsp Smoked paprika, 1 tbsp Garam Masala, 1 tsp Piri-Piri flakes, 2 Red onions (pureed), 2 cloves Garlic, 20g Ginger, 200ml Coconut milk, 100ml Red wine, 1 tbsp Honey...

Ingredients

  • 1kg Pork shoulder (chunks)
  • 1 tbsp Smoked paprika
  • 1 tbsp Garam Masala
  • 1 tsp Piri-Piri flakes
  • 2 Red onions (pureed)
  • 2 cloves Garlic
  • 20g Ginger
  • 200ml Coconut milk
  • 100ml Red wine
  • 1 tbsp Honey

Cooking Method

  1. The Scorch Sear pork in oil on maximum heat until blackened and charred; remove.
  2. The Architect Fry onion, garlic, and ginger until it turns into a sweet, dark jam.
  3. The Bloom Add spices and honey with a 50ml splash of wine; the steam will release the global aromatics.
  4. The Swell Add remaining wine and coconut milk; return meat. Simmer covered for 45 minutes until tender.
  5. The Final Flourish Top with raw fresh coriander and a final dust of raw cinnamon.
