THE SIGNATURE ATLANTIC ARROZ

Ingredients: 300g Carolino rice, 500g Mixed Seafood (Prawns, Mussels, Monkfish), 2 Red onions (pureed), 6 cloves Garlic, 400g Tomato passata, 1 tbsp Piri-Piri flakes, 1 tsp Saffron, 1 tsp Smoked paprika, 1L Lobster or Fish stock, 50ml Brandy...

Ingredients

  • 300g Carolino rice
  • 500g Mixed Seafood (Prawns, Mussels, Monkfish)
  • 2 Red onions (pureed)
  • 6 cloves Garlic
  • 400g Tomato passata
  • 1 tbsp Piri-Piri flakes
  • 1 tsp Saffron
  • 1 tsp Smoked paprika
  • 1L Lobster or Fish stock
  • 50ml Brandy

Cooking Method

  1. The Architect Fry onion puree and garlic in oil for 10 minutes until sweet and jammy.
  2. The Bloom Add spices and brandy with a 40ml splash of stock to form a deep glowing red fire-paste.
  3. The Swell Add rice; toast for 1 minute. Pour in passata and remaining stock; simmer uncovered.
  4. The Marriage Toss in seafood for the last 6 minutes. The rice should be wet ('malandrinho') and lacquered.
  5. The Final Flourish Finish with a massive hit of raw fresh coriander and lemon zest.
