THE SHRIVELLED COTTAGE-SNAP
(Our Play on Szechuan Green Beans and Tofu)
Ingredients: 300g Green beans, 200g Firm Tofu (cubed), 1 tbsp Chili bean paste (Doubanjiang), 1 tsp Szechuan peppercorns, 1 small onion (diced), 1 tbsp Ginger-garlic paste, 1 tbsp Soy sauce, 1 tsp Sugar...
Ingredients
- 300g Green beans
- 200g Firm Tofu (cubed)
- 1 tbsp Chili bean paste (Doubanjiang)
- 1 tsp Szechuan peppercorns
- 1 small onion (diced)
- 1 tbsp Ginger-garlic paste
- 1 tbsp Soy sauce
- 1 tsp Sugar
Cooking Method
- The Scorch Fry beans and tofu in oil until the beans are blistered/shrivelled and tofu is golden; remove.
- The Architect In the same pan, sauté onions and ginger-garlic until fragrant.
- The Bloom Add the fire paste and peppercorns with a 25ml splash of water; fry until the oil turns red.
- The Marriage Toss the beans and tofu back in with the soy and sugar; stir-fry for 2 minutes until dry and coated.
- The Finish Finish with a hit of toasted sesame oil and fresh coriander.
