THE SHREDDED POULTRY-DUST

Ingredients: 400g Cooked chicken (finely shredded), 1 tbsp Chili powder, 1 tsp Cumin, 1 tsp Garlic powder, 50ml Chicken stock, 1 tbsp Tomato purée...

Ingredients

  • 400g Cooked chicken (finely shredded)
  • 1 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 50ml Chicken stock
  • 1 tbsp Tomato purée

Cooking Method

  1. The Scorch Fry the shredded chicken in 1 tbsp oil until the strands are slightly crispy.
  2. The Bloom Add spices and tomato purée with a 25ml splash of stock; the steam will carry the spice into the dry fibers.
  3. The Marriage Toss on high heat until the liquid is absorbed and the chicken is stained dark red.
  4. The Final Flourish Use as a filling and top with raw lime juice.
