THE SHREDDED POULTRY-DUST
(Our Play on Chicken for Flautas/Taquitos)

Ingredients
- 400g Cooked chicken (finely shredded)
- 1 tbsp Chili powder
- 1 tsp Cumin
- 1 tsp Garlic powder
- 50ml Chicken stock
- 1 tbsp Tomato purée
Cooking Method
- The Scorch Fry the shredded chicken in 1 tbsp oil until the strands are slightly crispy.
- The Bloom Add spices and tomato purée with a 25ml splash of stock; the steam will carry the spice into the dry fibers.
- The Marriage Toss on high heat until the liquid is absorbed and the chicken is stained dark red.
- The Final Flourish Use as a filling and top with raw lime juice.
