Ingredients
- 400g Button mushrooms (whole)
- 100g Greek yogurt
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Kashmiri chili powder
- 1 tsp Garam masala
Cooking Method
- The Coat Whisk yogurt and spices; toss mushrooms until every surface is red.
- The Bloom Add a tiny 15ml splash of water to the spices before mixing to ensure a sticky paste.
- The Scorch Sear on high heat in a heavy pan or grill until the mushrooms release moisture and the edges char.
- The Final Flourish Dust with Chaat Masala and a hit of fresh coriander.
