(Our Play on Shanghai Scallion Oil Noodles)

Ingredients
- 200g Thin wheat noodles (boiled)
- 6 Spring onions (batons)
- 100ml Vegetable oil
- 2 tbsp Soy sauce
- 1 tbsp Dark soy sauce
- 1 tbsp Sugar
Cooking Method
- The Scorch Fry the spring onion batons in oil on low heat for 12 minutes until they are blackened and crispy.
- The Bloom Add the soy sauces and sugar to the pan with a 20ml splash of water; boil until the sugar dissolves.
- The Marriage Toss the noodles into the dark scallion oil until every strand is mahogany and glistening.
- The Final Flourish Top with the crispy blackened onions for a deep aromatic hit.
