THE SCALLION-OIL SILK

Ingredients: 200g Thin wheat noodles (boiled), 6 Spring onions (batons), 100ml Vegetable oil, 2 tbsp Soy sauce, 1 tbsp Dark soy sauce, 1 tbsp Sugar...

Ingredients

  • 200g Thin wheat noodles (boiled)
  • 6 Spring onions (batons)
  • 100ml Vegetable oil
  • 2 tbsp Soy sauce
  • 1 tbsp Dark soy sauce
  • 1 tbsp Sugar

Cooking Method

  1. The Scorch Fry the spring onion batons in oil on low heat for 12 minutes until they are blackened and crispy.
  2. The Bloom Add the soy sauces and sugar to the pan with a 20ml splash of water; boil until the sugar dissolves.
  3. The Marriage Toss the noodles into the dark scallion oil until every strand is mahogany and glistening.
  4. The Final Flourish Top with the crispy blackened onions for a deep aromatic hit.
