THE SCALLION-LACQUER BEEF
(Our Play on Chinese Beef with Scallions)
Ingredients: 400g Beef sirloin (thin slices), 6 Spring onions (cut into 4cm batons), 20g Ginger (sliced), 2 tbsp Soy sauce, 1 tbsp Oyster sauce, 1 tsp Sugar, 1 tbsp Cornflour...
Ingredients
- 400g Beef sirloin (thin slices)
- 6 Spring onions (cut into 4cm batons)
- 20g Ginger (sliced)
- 2 tbsp Soy sauce
- 1 tbsp Oyster sauce
- 1 tsp Sugar
- 1 tbsp Cornflour
Cooking Method
- The Coat Toss beef in cornflour until every slice is dry.
- The Scorch Sear beef in a white-hot pan for 1 minute until browned; remove.
- The Architect Fry spring onion batons and ginger until they have dark charred spots.
- The Bloom Add the silk ingredients and a 20ml splash of water; boil until syrupy.
- The Marriage Toss the beef back in for 30 seconds until the lacquer grips the meat and scallions.
