(Our Play on Paneer Butter Masala)

- 400g Paneer (cubed)
- 2 Red onions (finely diced)
- 1 tsp Turmeric
- 1 tsp Chili powder
- 1 tsp Garam masala
- 200g Tomato passata
- 100ml Double cream
- 50g Butter
- 1 tbsp Honey
- Fresh coriander
Cooking Method
- The Foundation Melt butter and sauté onions until they are deep golden brown and the sugars have released.
- The Bloom Add the spices and a 30ml splash of water to turn them into a fragrant, bubbling paste without burning.
- The Simmer Pour in the tomato passata and simmer for 5 minutes until thickened.
- The Marriage Turn the heat to low, stir in the cream, honey, and paneer cubes; coat every piece in the silk.
- The Finish Scatter fresh coriander over the top for a hit of raw aromatics.
