THE SAFFRON RICE CLOUD
(Our Play on Zarda / Sweet Rice)
Ingredients: 250g Basmati rice, 150g Sugar, 100ml Water, 1 Cinnamon stick, 3 Cardamom pods, Saffron strands, 20g Almonds, 20g Raisins, 20g Pistachios...

Cooking Method
- The Par-Boil Boil rice with saffron until 80% cooked; drain and set aside.
- The Syrup Melt ghee in a pot; sizzle whole spices and nuts, then add sugar and water to form a syrup.
- The Marriage Add the rice to the syrup; stir gently to coat every grain in the saffron cloud.
- The Steam Cover with a tight lid and steam on the lowest heat for 10 minutes.
- The Finish Top with a sprinkle of crushed nuts for a final fresh hit.
