THE SAFFRON REEF-MIST
(Our Play on Coastal Balkan Fish Soup)

Ingredients
- 500g Mixed White Fish (chunks)
- 2 Shallots (minced)
- 2 Carrots (minced)
- 2 cloves Garlic
- 1 tsp Saffron strands
- 1 tsp White pepper
- 1 tsp Salt
- 1L Fish stock
- 2 Lemons (juiced)
- 50ml Olive oil
Cooking Method
- The Architect Sauté shallots, carrots, and garlic in oil until soft.
- The Bloom Add saffron and pepper with a 30ml splash of stock; the heat will release the golden oils.
- The Swell Add remaining stock; simmer for 15 minutes. Gently poach fish for 6 minutes.
- The Marriage Stir in lemon juice at the end to sharpen the golden mist.
- The Final Flourish Finish with a massive hit of raw fresh parsley and extra raw olive oil.
