Ingredients
- 500ml Full-fat milk
- 2 tbsp Sugar
- 30g Almonds (soaked, peeled, and ground to a paste)
- 1 tsp Cardamom powder
- Saffron strands
Cooking Method
- The Reduction Bring milk to a rolling boil; reduce heat and simmer for 5 minutes until slightly thickened.
- The Bloom Stir in the saffron and cardamom; the heat will bloom the yellow oils and fragrant scent.
- The Silk Merge Whisk in the almond paste and sugar; simmer for 3 minutes until the milk is creamy and opaque.
- The Final Flourish Top with a sprinkle of crushed pistachios and serve steaming hot or ice-cold.
