THE SAFFRON-GARLIC REEF
(Our Play on Portuguese Prawns in Golden Silk)

- 400g King prawns
- 6 cloves Garlic (minced)
- 50g Butter
- 1 tsp Saffron strands
- 1 tsp White pepper
- 100ml Dry White Wine
- 1 Lemon (juiced)
Cooking Method
- The Scorch Sear prawns on high heat in oil for 2 minutes until pink; remove.
- The Architect Melt butter and sauté garlic until it turns a pale biscuit gold.
- The Bloom Add saffron and pepper with a 30ml splash of wine; the heat will release the golden spice oils.
- The Marriage Add lemon juice; return prawns and toss for 1 minute until lacquered in the yellow silk.
- The Final Flourish Top with raw fresh coriander and extra lemon zest.
