THE SAFFRON EGG-GRAINS

Ingredients: 300g Basmati rice (washed), 4 Hard-boiled eggs (peeled), 2 Red onions (sliced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Garam masala, Saffron strands...

Ingredients

  • 300g Basmati rice (washed)
  • 4 Hard-boiled eggs (peeled)
  • 2 Red onions (sliced)
  • 1 tbsp Ginger-garlic paste
  • 1 tsp Turmeric
  • 1 tsp Garam masala
  • Saffron strands

Cooking Method

  1. The Scorch Sear the eggs in oil and a pinch of turmeric until the skin is bubbly and golden; set aside.
  2. The Architect Fry onions until dark caramel brown.
  3. The Bloom Add spices and a splash of water to form a thick masala base.
  4. The Layer Spread rice over the masala; place eggs on top. Add 600ml boiling water and cover with a tight lid.
  5. The Steam Cook on lowest setting for 15 minutes. Let sit covered for 5 minutes.
  6. The Final Flourish Fluff with a fork and garnish with fried onions and fresh mint.
