THE SAFFRON EGG-GRAINS
(Our Play on Egg Biryani / Spiced Rice with Eggs)
Ingredients: 300g Basmati rice (washed), 4 Hard-boiled eggs (peeled), 2 Red onions (sliced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Garam masala, Saffron strands...

- 300g Basmati rice (washed)
- 4 Hard-boiled eggs (peeled)
- 2 Red onions (sliced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Garam masala
- Saffron strands
Cooking Method
- The Scorch Sear the eggs in oil and a pinch of turmeric until the skin is bubbly and golden; set aside.
- The Architect Fry onions until dark caramel brown.
- The Bloom Add spices and a splash of water to form a thick masala base.
- The Layer Spread rice over the masala; place eggs on top. Add 600ml boiling water and cover with a tight lid.
- The Steam Cook on lowest setting for 15 minutes. Let sit covered for 5 minutes.
- The Final Flourish Fluff with a fork and garnish with fried onions and fresh mint.
