THE ROSEMARY LAMB ORBS
(Our Play on Balkan Kofta with heavy Herb Logic)
Ingredients: 500g Lamb mince, 4 cloves Garlic (minced to a paste), 1 small onion (pureed), 2 tbsp Fresh Rosemary (finely minced), 1 tsp Black pepper, 1 tsp Salt, 2 tbsp Greek Yogurt, 1 tbsp Olive oil...
Ingredients
- 500g Lamb mince
- 4 cloves Garlic (minced to a paste)
- 1 small onion (pureed)
- 2 tbsp Fresh Rosemary (finely minced)
- 1 tsp Black pepper
- 1 tsp Salt
- 2 tbsp Greek Yogurt
- 1 tbsp Olive oil
Cooking Method
- The Build Knead meat, onion, garlic, and spices together until tacky.
- The Bloom Whisk yogurt and oil with a tiny 5ml splash of lemon juice; fold into the meat to release the rosemary oils.
- The Rest Chill for 2 hours to set the herbal architecture.
- The Scorch Form small orbs; grill on maximum heat until rock-hard charred and the fat is blistered.
- The Final Flourish Serve with raw cucumber ribbons and a hit of raw lemon.
