THE ROSE-WATER GRAINS
(Our Play on Balkan Sutlijaš / Rice Pudding)

Ingredients
- 200g Arborio rice
- 1L Whole milk
- 150g Sugar
- 2 tbsp Rose water
- 1 tsp Cardamom
- 1 Cinnamon stick
- 1 tsp Vanilla
Cooking Method
- The Swell Boil rice in water for 10 minutes until soft; drain.
- The Bloom Simmer milk with the cinnamon stick and cardamom; the heat will release the floral oils.
- The Simmer Add rice and sugar to the spiced milk; cook until thick and creamy.
- The Silk Merge Stir in rose water and vanilla at the last second; do not boil the flower oils.
- The Final Flourish Top with raw crushed pistachios and a dust of raw cinnamon.
