Ingredients: 300g Basmati rice (washed), 400g King prawns (cleaned), 2 Red onions (sliced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Chili powder, 1 tsp Garam masala...

Ingredients

  • 300g Basmati rice (washed)
  • 400g King prawns (cleaned)
  • 2 Red onions (sliced)
  • 1 tbsp Ginger-garlic paste
  • 1 tsp Turmeric
  • 1 tsp Chili powder
  • 1 tsp Garam masala

Cooking Method

  1. The Architect Fry onions for 10 minutes until deep caramel brown; set half aside for garnishing.
  2. The Bloom Add spices, ginger-garlic, and a splash of water to form a dark masala; fry for 2 minutes.
  3. The Sear Add prawns; stir-fry for 2 minutes until they turn pink.
  4. The Layer Spread the rice over the prawns; add 600ml warm stock and cover with a tight lid.
  5. The Steam Simmer on the lowest setting for 15 minutes; turn off heat and let sit for 5 minutes.
  6. The Final Flourish Fluff with a fork and top with the fried onions and fresh mint.
