Ingredients
- 300g Basmati rice (washed)
- 400g King prawns (cleaned)
- 2 Red onions (sliced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Chili powder
- 1 tsp Garam masala
Cooking Method
- The Architect Fry onions for 10 minutes until deep caramel brown; set half aside for garnishing.
- The Bloom Add spices, ginger-garlic, and a splash of water to form a dark masala; fry for 2 minutes.
- The Sear Add prawns; stir-fry for 2 minutes until they turn pink.
- The Layer Spread the rice over the prawns; add 600ml warm stock and cover with a tight lid.
- The Steam Simmer on the lowest setting for 15 minutes; turn off heat and let sit for 5 minutes.
- The Final Flourish Fluff with a fork and top with the fried onions and fresh mint.
