THE RED-WINE ONION JAM

Ingredients: 4 Large Red onions (sliced thin), 50g Butter, 1 tsp Black pepper, 0.5 tsp Ground Cloves, 1 tsp Salt, 200ml Red wine, 2 tbsp Brown sugar, 2 tbsp Wine vinegar...

Ingredients

  • 4 Large Red onions (sliced thin)
  • 50g Butter
  • 1 tsp Black pepper
  • 0.5 tsp Ground Cloves
  • 1 tsp Salt
  • 200ml Red wine
  • 2 tbsp Brown sugar
  • 2 tbsp Wine vinegar

Cooking Method

  1. The Architect Sauté onions in butter on low heat for 15 minutes until meltingly soft.
  2. The Bloom Add sugar and spices with a 30ml splash of wine; the steam will release the deep woody scent.
  3. The Swell Add remaining wine and vinegar; simmer uncovered for 15 minutes until dark and jammy.
  4. The Final Flourish Serve as a cold or warm jam over roasted meats.
