THE RED-WINE ONION JAM
(Our Play on Confit d'Oignons)
Ingredients: 4 Large Red onions (sliced thin), 50g Butter, 1 tsp Black pepper, 0.5 tsp Ground Cloves, 1 tsp Salt, 200ml Red wine, 2 tbsp Brown sugar, 2 tbsp Wine vinegar...
Ingredients
- 4 Large Red onions (sliced thin)
- 50g Butter
- 1 tsp Black pepper
- 0.5 tsp Ground Cloves
- 1 tsp Salt
- 200ml Red wine
- 2 tbsp Brown sugar
- 2 tbsp Wine vinegar
Cooking Method
- The Architect Sauté onions in butter on low heat for 15 minutes until meltingly soft.
- The Bloom Add sugar and spices with a 30ml splash of wine; the steam will release the deep woody scent.
- The Swell Add remaining wine and vinegar; simmer uncovered for 15 minutes until dark and jammy.
- The Final Flourish Serve as a cold or warm jam over roasted meats.
