Ingredients: 800g Beef joint, 4 cloves Garlic (sliced), 2 Red onions (quartered), 1 tsp Smoked paprika, 1 tsp Black pepper, 1 tsp Dried Thyme, 200ml Red wine, 1 tbsp Honey, 50ml Olive oil...

Ingredients

  • 800g Beef joint
  • 4 cloves Garlic (sliced)
  • 2 Red onions (quartered)
  • 1 tsp Smoked paprika
  • 1 tsp Black pepper
  • 1 tsp Dried Thyme
  • 200ml Red wine
  • 1 tbsp Honey
  • 50ml Olive oil

Cooking Method

  1. The Scorch Sear beef on maximum heat until blackened all over; remove.
  2. The Bloom Whisk wine, honey, and spices in the roasting tray with a tiny 20ml splash of water.
  3. The Marriage Place beef, onions, and garlic in the tray. Roast at 190°C for 30 minutes until a dark red lacquer forms.
  4. The Final Flourish Baste with the raw pan juices; top with fresh raw rosemary.
