THE RED-WINE MEAT SWELL
(Our Play on Portuguese Roast Beef)

- 800g Beef joint
- 4 cloves Garlic (sliced)
- 2 Red onions (quartered)
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 1 tsp Dried Thyme
- 200ml Red wine
- 1 tbsp Honey
- 50ml Olive oil
Cooking Method
- The Scorch Sear beef on maximum heat until blackened all over; remove.
- The Bloom Whisk wine, honey, and spices in the roasting tray with a tiny 20ml splash of water.
- The Marriage Place beef, onions, and garlic in the tray. Roast at 190°C for 30 minutes until a dark red lacquer forms.
- The Final Flourish Baste with the raw pan juices; top with fresh raw rosemary.
