THE RED-WINE MARINE TUBES
(Our Play on Stuffed Squid with Rice & Herbs)
Ingredients: 400g Squid tubes, 50g Anchovies (minced), 100g Rice (uncooked), 1 Onion (minced), 2 cloves Garlic, Handful of fresh Dill, 1 tsp Black pepper, 0.5 tsp Allspice, 200ml Red Wine, 2 tbsp Tomato purée...
Ingredients
- 400g Squid tubes
- 50g Anchovies (minced)
- 100g Rice (uncooked)
- 1 Onion (minced)
- 2 cloves Garlic
- Handful of fresh Dill
- 1 tsp Black pepper
- 0.5 tsp Allspice
- 200ml Red Wine
- 2 tbsp Tomato purée
Cooking Method
- The Build Mix rice, anchovies, onion, and spices; add a 10ml splash of wine.
- The Scorch Stuff squid tubes; fry in oil for 2 minutes until charred and curled.
- The Bloom Add tomato purée and wine to the pan; the steam will release the woody perfume.
- The Swell Simmer covered for 20 minutes until the rice inside the tubes is tender.
- The Final Flourish Top with raw fresh parsley matchsticks and extra lemon zest.
