THE RED-WINE MARINE-MIST
(Our Play on French Tuna Stew with Wine)
Ingredients: 400g Fresh Tuna (cubed), 2 Red onions (diced), 1 clove Garlic, 100g Black olives, 1 tsp Smoked paprika, 1 tsp Dried Thyme, 200ml Red wine, 200g Tomato passata...
Ingredients
- 400g Fresh Tuna (cubed)
- 2 Red onions (diced)
- 1 clove Garlic
- 100g Black olives
- 1 tsp Smoked paprika
- 1 tsp Dried Thyme
- 200ml Red wine
- 200g Tomato passata
Cooking Method
- The Scorch Sear tuna cubes for 1 minute on high heat until charred; remove (keep them raw inside).
- The Architect Sauté onions and garlic in olive oil until sweet and golden.
- The Bloom Add spices and olives with a 30ml splash of wine; the steam will release the woody perfume.
- The Swell Add remaining wine and passata; simmer for 10 minutes until thick.
- The Marriage Return tuna to the red-silk; simmer for 1 minute only.
- The Final Flourish Top with a massive hit of raw fresh basil and a drizzle of raw olive oil.
