THE RED-SWELL PULSE GRAINS
(Our Play on Arroz de Feijão / Bean Rice)

Ingredients
- 300g Carolino rice
- 400g Kidney beans (canned/rinsed)
- 1 Onion (diced)
- 1 Red pepper (diced)
- 100g Bacon (minced)
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 400g Tomato passata
- 600ml Beef stock
Cooking Method
- The Scorch Fry bacon until crispy; add onion and pepper and sauté until charred.
- The Bloom Add paprika and pepper with a 30ml splash of stock; the steam will release the smoky oils.
- The Swell Add rice, beans, passata, and remaining stock; cover and simmer for 15 minutes.
- The Marriage The rice should be 'loose' and lacquered in a thick red-silk.
- The Final Flourish Top with raw fresh parsley and extra virgin olive oil.
