Ingredients: 300g Carolino rice, 400g Kidney beans (canned/rinsed), 1 Onion (diced), 1 Red pepper (diced), 100g Bacon (minced), 1 tsp Smoked paprika, 1 tsp Black pepper, 400g Tomato passata, 600ml Beef stock...

Ingredients

  • 300g Carolino rice
  • 400g Kidney beans (canned/rinsed)
  • 1 Onion (diced)
  • 1 Red pepper (diced)
  • 100g Bacon (minced)
  • 1 tsp Smoked paprika
  • 1 tsp Black pepper
  • 400g Tomato passata
  • 600ml Beef stock

Cooking Method

  1. The Scorch Fry bacon until crispy; add onion and pepper and sauté until charred.
  2. The Bloom Add paprika and pepper with a 30ml splash of stock; the steam will release the smoky oils.
  3. The Swell Add rice, beans, passata, and remaining stock; cover and simmer for 15 minutes.
  4. The Marriage The rice should be 'loose' and lacquered in a thick red-silk.
  5. The Final Flourish Top with raw fresh parsley and extra virgin olive oil.
